Chocolate Chip Buttermilk Protein Pancakes

Ok, so you like pancakes do ya? Of course, you do! I really can’t think of anyone that doesn’t like pancakes in some form so I thought this would be a good idea to put up one of my favorite recipes. Now as you know most standard pancakes are not healthy in the least. They are loaded with refined carbs and sugar and that is just the start. While they might make a great cheat meal, they don’t offer something you could add to your nutrition plan regularly. So I wanted to bring you something that you could eat often, and not feel guilty about it either. I have several different ones that I really like so I wanted to go with this one to get us off to a good start. So let’s take a look at what we have to help you fuel that body, and build some muscle at the same time.
You are going to Love these Pancakes!
1 cup of Kodiak Cakes buttermilk pancake flour
2 scoops of Vanilla Whey Isolate
3/4 cup of Low-fat Cottage Cheese
1/2 cup of Egg Whites
3 Tbsp Flax Ground Flax Seeds
1/4 cup Lily’s Milk Chocolate Chips
1/4 cup of Purified Water
Sugar-Free Chocolate Chips to Die For!
1. Now gather up all your ingredients at once so you don’t have to start looking around your kitchen as you are making the recipe
2. Take the cottage cheese, flax seeds, egg whites, and water into your blender and blend this concoction up until its silky smooth.
3. Take the Kodiak Cakes pancake flour and add in the whey isolate into a bowl
4. Mix these dry ingredients together
5. Now add in the blended wet ingredients to the dry ingredients with a hand mixer or hand whip. No, you idiot! A whip used to scramble eggs, not the one you use in the bedroom when you are getting your kink on!
6. Preheat your skillet and coat with a light coating of extra virgin coconut oil.
7. Keep the heat at low to medium. The last thing you want to do is try
and cook them too fast and you end up burning the outside while the inside is raw.
8. Cook each side for about 4-5 minutes and then they are ready to flip. Once you see bubbles on the outer edges this is a good sign it’s time to rotate.

Now, these pancakes don’t just taste amazing but they are packed to the brim with muscle-building protein. This will not only help keep you in an “Anabolic” state but you will also feel much better than when eating regular pancakes. I am sure many of you reading this know exactly what I am talking about. Nothing like waking up on a Sunday morning to see your better half in the kitchen cooking up some flapjacks. You wolf down a big stack of pancakes like you haven’t eaten anything in days. They are covered with a sugar-loaded sticky mess which most likely didn’t even contain any actual real maple syrup. Basically some high fructose corn syrup and food coloring. Then about two hours later you start feeling exhausted. In fact, you are thinking now is the perfect time to take a nice nap but it’s only been a couple of hours since you woke up. You try and fight it off but, resistance is futile as you fall asleep on the couch. You awaken with a pool of drool slobbering out of the corner of your mouth not even knowing where you are. It almost reminds you of waking up in college the morning after attending a Tequila drinking contest. As you try to shrug off the coma that you just arose from, you wonder what the hell just happened. Now you are a groggy mess that really has set the rest of the day to get nothing done productively because you feel like a sloth on Xanax. Does any of this sound familiar?

The flax seeds will provide some nice fiber to the mix as I am sure many of you reading this do not consume as much as you should. Lily’s chocolate chips are fantastic for those that want a low carb, no sugar form of chocolate chips. They are sweetened with stevia, are non-GMO, and gluten-free as well. They taste amazing and even my diabetic clients have found that they don’t raise their blood sugar. For those of you who need their chocolate fix but don’t want to sabotage their diet, this is one option to look into.
Ground Flaxseeds are a Great Source of Fiber!
Now you are probably thinkings that this idiot didn’t even mention what to put on top. No righteous pancake fan would eat these damn things dry! Well, when it comes to the toppings I am going to leave that to your preference. One option is that I use a healthy homemade jam made with berries. You can use a small coating on the top pancake to give it some additional healthy carbs. I will give you my recipe for this soon. You could also add a tablespoon of almond or cashew butter on top. This tastes amazing as well. Maybe you are old fashioned and don’t like fruit and prefer a syrup. If you are going to use a syrup go with real maple syrup that comes from an actual tree, not a cornfield. Did you get that one? Yes, stay away from fake maple syrup that is made from high fructose corn syrup and chemicals.
If you are trying to eat more carbs or trying to gain weight here is a good one. Now when it comes to maple syrup I am biased, oh yea that is right. I think Canadians do the best job here and you won’t convince me otherwise. I like one made by a company called Escuminac. They are an award-winning company that in my opinion is one of the best in the world. They produce a pure organic, Grade A quality syrup that is absolutely amazing. It is produced in small quantities and is made from sap that is harvested during the first days of the run. It is velvety smooth and dances on your taste buds. One that I like is called Lakanto maple-flavored syrup. It is sweetened with Monk Fruit and is completely sugar-free. It contains 1 gram of net carbs per serving as well, so for those of you who are on a keto diet, it can be a lifesaver when you are craving something sweet. This is also good for diabetics as well. Who most likely have a sweet tooth reputation because hey, if you didn’t you most likely wouldn’t have diabetes in the first place. Oh boy, the good ole Beetus is back. Ok, so here you have it. One of the tastiest and healthiest protein pancake recipes you will find. I know how it is. When you are craving pancakes and there isn’t a cheat meal scheduled in sight for another five days it can be frustrating. But with this recipe you will be able to have your cake and eat it too…or should I say pancakes. The above recipe is a huge portion so if you are a super heavyweight powerlifter it may be good for you alone. But for the majority of us, you could probably share half with your wife and kids. The next time you are looking for a hearty breakfast but not wanting to go the unhealthy route, give this recipe a try. I am sure you will be pleased not only with the taste but also with how you feel. Nothing feels better than eating pancakes without guilt and even better is not going into a diabetic coma afterward!
